Sort of like making a samurai sword--fold the basic material until you get the results you want. I was surprised the first time I saw a Japanese omelet chef using chopsticks to skillfully move the eggs around in the pan, then I realized I shouldn't have been. If you know what you're doing with them (like the guy in the video), then chopsticks can be just as good as a spatula.
