Rubbish. You are just letting the heat out, unless you are cooking on an open fire, in which case you need to buy either a Weber kettle or a gas grill.

5 minutes on a side, depending on thickness.

22 oz porterhouse

let the gas grill come up to full heat then slam that kow on there, shut the lid.

open the lid in 2 minutes, if the top is covered in blood, flip it, slam the lid.

open the lid in 2 mins, if there is blood, flip it, slam the lid.

in 1 min, yank it out of there and let it sit on the plate for a couple mins.

dig in

be flexible, depending on the type of grill

it's not rocket surgery.
